  • 1 1/2 tsps Dr. Sears' Zone Extra Virgin Olive oil
  • 1 cup Onion - chopped
  • 1 Green bell pepper - chopped
  • 1 cup Tomato - chopped
  • 1 1/2 tbsps Green olives - sliced
  • 1 tbsp Capers
  • 1 tbsp Fresh parsley
  • 1 tbsp Fresh cilantro
  • 1 tbsp Wine vinegar
  • 4 oz Cod - or haddock
  • 1 cup Green beans

Instructions

  1. Heat the olive oil in an oven-proof sauté pan over medium heat. Add onion and green pepper and sauté for 2 minutes.
  2. Add green olives, capers, parsley, cilantro and wine vinegar and cook for another 2-3 minutes.
  3. Add the fish and place in the oven at 325 °F until fish is flaky, about 12-15 minutes.
  4. Cook green beans to your liking .
