Dijon Mustard and Tarragon Chicken

Seasoned chicken wrapped in bacon, with a fresh salad and fruit yogurt dessert…sign me up.

  • 3 oz Boneless chicken breast
  • Salt and pepper - to taste
  • 1 tbsp Dijon mustard
  • 1 tsp Tarragon
  • 1 slice Turkey bacon
  • 3 cups Baby spinach
  • 1 Tomato
  • 1/4 cup Chopped mushrooms
  • 1 1/2 tsps Dr. Sears' Zone Extra virgin olive oil - drizzle
  • 2 tbsps Zone Herbed Dressing
  • 1/2 cup Strawberries
  • 1/4 cup Blackberries
  • 1/4 cup Grapes
  • 2 tbsps Plain low-fat yogurt
  • Cinnamon - to taste
  • Nutmeg - to taste
  • 1 1/2 cups Green beans - steamed
  • 1 tsp Dr. Sears' Zone extra virgin olive oil - drizzle
  • Salt and pepper - to taste

Instructions

  1. Rub chicken breast with salt, pepper, Dijon mustard and tarragon.
  2. Place in Ziplock bag and refrigerate for 30-60 minutes.
  3. Preheat oven to 350ºF.
  4. Wrap bacon around chicken. Bake for 40 minutes or until internal temperature is 180ºF.
  5. Prepare salad made with: baby spinach, tomato, and mushrooms.
  6. Toss with extra virgin olive oil and Zone Herbed Dressing.
  7. For dessert: In a bowl mix strawberries, blackberries and grapes with yogurt. Sprinkle with cinnamon and nutmeg.
