  • 4 cups Cauliflower - (cooked)
  • 2 cups Green beans
  • 2 cups Chopped celery
  • 2 cups Chopped mushrooms
  • 1 Chopped green peppers
  • 3/4 cup Onion
  • 1/4 cup Kitchen Basics unsalted vegetable stock
  • 1 tbsp Dr. Sears' Zone Extra Virgin Olive Oil - divided
  • 2 tsps Poultry seasoning
  • 2 tsps Dry onion flakes
  • Salt and pepper - to taste
  • 1 tsp Slivered almonds
  • 6 oz Boneless chicken breast
  • 1 Pear - 1/2 each

Instructions

  1. Preheat oven to 350ºF.
  2. Mix vegetables, stock, 2 teaspoons olive oil, seasonings, and almonds.
  3. Place into a casserole dish.
  4. Rub 1 teaspoon olive oil over boneless chicken
  5. Sprinkle with salt and pepper, arrange on top of vegetable dressing, cover dish and bake for 30 minutes.
  6. Divide into 2 plates.
