This breakfast in a bowl also tastes great for lunch or dinner.
- 3 oz Canadian Bacon - minced (or leftover meat)
- 1 cup Zucchini - diced small or grated
- 1 cup Tomato - diced small
- 1 cup Onion - diced small or grated
- 1/2 cup Green Pepper - diced small or grated
- 1 cup Mushrooms - diced small or grated
- 1 1/2 tsps Dr. Sears' Zone Extra Virgin Olive Oil
- 2 tbsps Tomato Juice - low sodium
- Salt and Pepper - to taste
- 1 tsp Worcestershire Sauce - to taste
- 1/4 cup Egg Beaters- whites
Total Fat 11g
- Cut the Canadian bacon and all the veggies into small pieces, set aside.
- Sauté the veggies in olive oil, tomato juice and Worcestershire sauce until tender or to your liking. (Add more tomato juice or water if needed.)
- Add cooked meat and Egg Beaters.
- Cook until egg is done.
