Fusilli and Roasted Vegetables


This dish is great hot or cold! A favorite of Dr. Sears with roasted tomatoes and eggplant.

  • 1/2 cup Zone PastaRx Fusilli
  • Cooking spray - olive oil Pam
  • 3 Roma tomatoes - halved
  • 1 cup Eggplant - chopped into little cubes
  • 2 cloves Garlic - leave paper on cloves to roast
  • to taste Salt & pepper
  • to taste Curry
  • 2 tbsps Low-fat feta
  • 1 tsp Dr. Sears’ Zone Extra Virgin Olive Oil
  • 1 tbsp Fresh basil - or 1 tsp dried

  1. Preheat oven to 425°F.
  2. Place the tomatoes, eggplant and garlic onto a baking sheet. Spray with Pam and sprinkle with salt, pepper, and any spices you like. Cook for about 25 minutes or until soft.
  3. Meanwhile prepare fusilli according to package directions timed with completion of roasted vegetables. Drain.
  4. When roasted vegetables are soft remove from the oven.
  5. Squeeze the garlic from the paper into bowl.
  6. Add pasta, feta cheese, extra virgin olive oil and fresh basil.
  7. Toss to mix up.
