Baked Fusilli with Zucchini

  • 1/2 cup Zone PastaRx Fusilli
  • 1 tsp Dr. Sears’ Zone Extra Virgin Olive Oil
  • 1/2 cup Zucchini - cut into small cubes
  • 1/2 cup Green beans - trimmed and cut diagonally in half
  • 1/2 (14 oz) can Canned tomatoes - diced
  • 1/2 cup Tomato sauce
  • 2 tbsps Water
  • 1/4 tsp Italian seasoning
  • 1 slice Canadian bacon - chopped to bite-sized pieces
  • to taste Salt and pepper
  • 2 tbsps Mozzarella cheese, shredded, part skim milk
  • 1 tsp Grated Parmesan
  • Cooking spray

  1. Preheat oven to 375°F
  2. Prepare Zone fusilli according to package directions with zucchini, green beans, (reduce cooking time by 5 minutes). Drain.
  3. Heat oil in skillet over medium-high heat.
  4. Stir in olive oil, tomatoes (with juice), tomato sauce, 1-2 tablespoons of water, Italian seasoning, Canadian bacon, salt and pepper. Cover and simmer 4 minutes.
  5. Transfer into small baking dish coated with cooking spray. Sprinkle with cheeses. Cover and bake 10 minutes or until bubbly.
  6. Uncover and bake 5 minutes longer.
