What has helped me the most is Kristy Walkers "Zone Perfect cookbook". She gives some good overall advice and the recipes are very tasty. (available on amazon.com) The only think I don't like about the book is that most of the recipes are for one serving. I have to adjust them for more servings. Be prepared to use very large frying pans and dutch ovens if you are cooking for more than one. I like to cook the vegetable dishes and add my own meat that I grill ahead of time. I pick nice days and grill several pounds of meat so that I've always got a supply of protein and can quickly cook up the vegetables to go with it. I also use vegetable recipes from other sources and double or triple the serving size so that I get most of my carbs from the vegetables.
