    Here is what I found (but not yet tried):

    Ingredients
    Chop 1 head cauliflower into small florets
    1 tablespoon olive oil
    1/2 teaspoon sea salt or garlic salt
    1 tablespoon grated Parmesan cheese
    .
    Directions
    Place cauliflower in a greased 15-in. x 10-in. x 1-in. baking pan. Drizzle with oil and sprinkle with salt; toss to coat.
    Bake, uncovered, at 400° for 15-18 minutes or until tender, stirring once.
    Sprinkle on the cheese.
    .
    Yield: 4 servings.
    1 serving: 3/4 cup equals 11 g carbohydrate minus 5 g fiber equals 6 g carbohydrate.

    Hi John - I love to buy a bag of frozen cauliflower and eat it like popcorn while still frozen. It sounds weird but it's very good.

    What about fresh ones? You can make great salad with celery, lemon juice and olive oil.
