    My dinner tonight was pan seared scallops, yellow beans sautéed in olive oil, lemon juice, onion, garlic and pepper, with fresh home-made guacamole. What was yours?

    my dinner was:

    balsamic and rosemary broiled chicken
    with cauliflower, yellow bell pepper, tomatoe
    and guacamole
    i also had cinnamon spiced green tea

    6 oz pre-cooked lightly broiled wild Cod. 4 blocks P.
    1 cup green beans (1 C), 12 Asparagras spears (1C). a handful of Kale (0 C),
    4 0z glass red wine (1 C unfav), lightly steamed in touch of oil for 3 C.
    1/2 small Pear for 4th C and desert.
    .(Fat in Fish and lightly steamed, lightly stir-fried - veggies.)
    Bummer - Zone Calculator on Formula Zone appears to be no more (:(

    Baked salmon in foil. Method: cut some foil, fold the sides up. Place two slices of lemon on the bottom, then fish on top. Heat some olive oil, add sliced garlic and fry lightly for 1 min, then add a tablespoon of capers and 6-7 cheery tomatoes. Fry for 30sec-1min and pour over fish. Sprinkle with salt and pepper. Seal the foil packet. Place in an oven for about 18min or so. I had this for dinner and it is my favourite way of cooking fish. Usually do it with cod, haddock etc. But salmon is maybe even better. I had some courgette (zuccini) wedges done in the oven as well at the same time. Completed with some strawberries for dessert - they are not great this time of year though!

    Sounds good!

    I changed mine a bit, turned the cauliflower into faux mashed potatoes.

    Today I am planning some home made burgers (veal or beef) + red onion pickle (slice red onion + drizzle with either lemon juice or some vinegar + some sea salt and leave for 30 min). I top my burgers with that pickle and thick slice of tomato and some hot salsa. Not sure what I am going to do for buns... perhaps I will just grill a half of a thin bun and pile my burger and things on top. It is nice to spread that bun with a little of mayo. I like to have rocket salad on the side. Will have a leftover of strawberries for dessert

    I also made beef burgers today with 96% fat free grass fed ground beef. I'm thinking I might use some small portabella mushrooms as the buns.

    Sunday: Beef Brisket, grass fed (Tender and moist - thx to a trick I learned).
    Cauliflower (Faux mashed potatoes)
    Vegetable homemade V-8 version juice smoothie - with mostly raw, organic, Geen Beans.
    Glass of 4oz red wine (Merlot).
