    John recently posted a recipe for cauliflower pizza crust as follows (questions below):


    I posted both the eggplant pizza crust and the cauliflower pizza crust recipes.
    The Cauliflower recipe is my wife;s favorite.
    We just had it again last night.
    I often double the recipe using 1 whole head of florets, as depicted, below.
    From MEMORY:
    In a food processor, rice raw cauliflower florets.
    1/2 head makes about 4 fluffed cups.
    Cook in microwave about 15 minutes
    20 minutes if doing a whole head.
    Set aside to cool (refrigerator, okay.)
    2 cups cooked = ~ 1/2 head, 4 cups cooked = ~ 1 head.
    Set egg(s) to room temp (or place in warm water for 5-10 minutes).

    Preheat oven to 450 deg F.
    Add 1 cup cheese per 1/2 head, 2 cups cheese per whole head cooked cauliflower.
    Add 2 egg whites ( 1 Egg) per 1/2 head or 4 egg whites (2 eggs) per whole head.
    Add spices as desired.
    Mix well.
    Roll out evenly, a very soft, wet dough, don't worry.
    1 whole head rolls out nicely to 14 in diameter.
    Bake on greased Parchment paper for 15 minutes 1/2 head or 20 minutes full head.
    Remove from oven, and let cool a bit.
    Add pizza sauce, cheese, and or whatever other toppings as desired.
    Place under broiler until cheese melted and/or toppings heated.

    -How many eggs are used and are they used raw and mixed in with the microwaved cauliflower and cheese to form a pizza dough? Thanks for any help with this (it sounds like a great idea!).

    YES, raw eggs and cheese and spices are mixed with the cooled, cooked riced cauliflower.
