    i was wondering if the shirataki noodles would be favorable. there is not much on the nutritional label.

    I just received in the mail, something similar.
    The Co is Miracle Noodle.
    No Carbs, all fiber - Glucomannan, from a root or the Shirataki mushrooms, I think.
    Have not given them a try; but since there are virtually no Carbs, its not a concern,
    because the Carbs are zero/virtually zero.
    I suspect the same with Shirataki made noodles, if I recall the label, correctly.

    I have tried them before. I prefer the angel hair style,
    But they need to be soaked and drained.
    otherwise, there is distinct odor.

    Thanks your the input. glad to have another alternative for pasta.

    I have tried them, too. I would use them more, but I don't due to the expense. Not a bad option, IMO.

    Otherwise, I agree, a tad expensive.

    i tried shirataki noodles with great hope, however i could not get past the texture and taste :-/
    when we have italian night at my house i serve spaghetti squash as an alternative to pasta.

    that brings me to another question regarding spaghetti squash. its on the favorable list which amazes me because its so sweet. but what about cooking method...does that have an effect on how its metabolized? most recipes call for baking it, is this how zoners prepare it?

    My wife does not like texture of the Shirataki noodles, either.
    We use them though to add to soups, etc.
    That way, they are acceptable.
    .
    With Spaghetti Squash, the methods are posted in the recipes topic.
    You can do a search.
    Most use microwave.
    Cut them in half.
    Add about 1/4 inch water to a plate.
    Remove seeds.
    Place cut side down on plate (steams them).
    Cook at about 15 minutes, check, add more time until you get to tenderness desired.
    My wife and I like it slightly al dente.

    I bake it cut in half with thebcut side down against the baking sheet. Bake it just until the skin gives to the touch. If you bake it too long it has a more squash-like taste.

    I find it to be a bit of a struggle to slice it prior to baking, so I will toss it whole into the microwave for 1 minute or so, that seems to be enough to make it a bit easier to cut.
