Oh my gosh, so good and so tasty! As its been a typical New England Fall weekend, we broke out one of our grass fed roasts this weekend. . For store bought roasts, my wife would put them in a crock pot, woth a can of Cream of Mushroom soup. Just to give it some flavor. . So, I suggested that she cook it with little additions, so we can taste and enjoy the real taste of the quality beef. She added just one onion, a couple of sliced carrots, just a dash of salt and pepper, and a small splash of red wine. That was it. Too big to fit in our 26 yr old 3 quart crock pot, so slowly cooked in oven at 250 deg F for about four hours. And cut-wise it was not a better cut: Chuck Blade Roast. . But, the taste! Just like meat was meant to be, very, very delicious. And hardly any fat, like you find in better cuts of super market roasts. . Can't wait to try some of the other "higher" or "better" roasts cut from our grass fed side of beef! . Cheers!

Sounds wonderful and yummy and it's not even one of the better cuts!!! I'm keeping your approach in mind for when circumstances in my life are right for "bulk-buying" like you are ... :-) A |

Every one has challenges to over come. We still have some finance issues; however, we started a plan to pay off our mortgage in 11-12 years, instead of the 28 years remaining! And in about 5 years all of our current debt, except the house mortgage will (should) be paid off. So, by the time i reach the minimum retirement age at 67-1/2 we should be OK. Though it has taken us a while to be able to afford some extra's, like setting aside funds for the side of beef. We did raise 4 children on one small income, and we also home schooled them - though I feel we and they are much better off for it. No regrets for the sacrifices!

I love homeschooling ... I think it's great if you can do it. How did you do the homeschooling? Wow, 11-12 yrs vs 28 yeras is AWESOME. Sounds like you've had a very rich family life ... i agree, no regrets necessary at all. My own life is beginning at 45, because my childhood trauma is finally healing, and so I'm enjoying life more and more and grateful for that ... and I'm getting my physcal health back too ... A

And the Zone is a great big step for your health! (We used various curriculum available for home schoolers and we changed and evolved the materials we used.)
