    Cooked up some Steele cut oats, chicken broth and a little butter, salt and pepper in the crock pot yesterday! I used them as a side dish to my grilled chicken breast. Also had some broccoli. Then some blueberries for dessert. I was surprised that my husband really liked them. Then my son was here for awhile today and had the left overs with his lunch and also liked them. I'm not sure if I got this idea from this site or from another one :-)

    That's an interesting twist on oatmeal. My kids (12 & 9) get annoyed when I don't have starches at dinner but they do like oatmeal. Thanks to the terrible public school lunches they crave carbs during the week.

    What's your recipie? Do you replace 100% of water with chicken broth? 50/50?

    How long in your crockpot?

    You can do however you would like.
    I get the impression that she used 100% chicken broth.
    Steel Cut Oats can be done over the stove for about 30 minutes, stirring often.
    Or for a breakfast ready meal, folks do an overnight on Low in the Crock Pot.
    Then eat what they want and refrigerate the rest, having pre-cooked oatmeal ready to just heat for additional morning breakfasts.
    So, if you are having it as a lunch or dinner meal, you could do the same.
    You can also add what ever you want to them as you would any other meal - be it breakfast, lunch, or dinner.
    For breakfast you could add fruits such as berries or apples and cinnamon.
    For other meals you could add some veggies if you want, as well.
    Wide open, be creative, no limits.
    Though, I myself never thought of doing steel cut oats as a dinner replacement starch ... until now.

    Hi John and Joe;
    I used all chicken broth as a water replacement and cooked them on high to start then turned them to low. I put a little organic butter, salt and pepper in because I thought it would taste good:-) Next time i'll try some other spices and see how they come out. Don't know exactly how long I cooked them for because I was home and checked on them at frequent intervals. If leaving them all day, I would do them on low.

    There's a recipe for steel cut oats "risotto" in the book "Zone Meals in Seconds" that you might like to check out. If I remember correctly, it also contains parmesan and lemon juice.
