    UPDATED: My Chocolate Yogurt Mousse:
    .
    IINGREDIENTS
    1 cup 2% palin yogurt, Greek style
    2 egg whites
    11/4 tsp Cream of Tarter
    Pinch Sea Salt
    .
    1 Tbl unsalted butter
    1 tsp EVOO & 1 tsp Coconut Oil (Or 2 tsp EVOO)
    2 tsp vanilla extract
    2 tsp raw pure maple syrup & 2 tsp raw pure honey & 1/2 tsp Xylitol (4g) & 1 tsp (4 drops) Stevia
    - OR equivalent sweeteners of choice
    6 Tbl raw, virgin cocoa powder
    .
    DIRECTIONS
    Separate 2 eggs, set aside.
    Add remaining ingredients, sans Cream of Tarter and pinch of salt, and blend.
    In large bowl add egg whites & pinch of salt.
    Whip egg whites until peeks form.
    Add Cream of tarter and whip until stiff peaks.
    Fold 'chocolate' mix into egg whites.
    Chill at least 2 hours.
    Serving Size: 4

    NUTRITION
    Calories 134
    Fat 7.0 g = 2 blocks
    Protein 9.6 g = 1.5 blocks
    Carbs (Net) 12.8-2.7 = 10.1 = 1.5 blocks

    You forgot the usual warning about organic eggs versus conventional eggs!

    Or does it make no difference here?

    Also, there's always egg white powder (not egg protein powder, a completely different product) if one is concerned ... it's pasterilized (sp?)

    Just whip it up the same way after following instructions

    Ha-Ha - you are free to choose whatever Egg Whites you want.
    As for me and my household, we choose Pastured Eggs.

    P.S. TYPO: 1/4 tsp Cream of Tarter, and NOT 11/4!
    By the way the Pinch of salt and Cream of Tarter help the egg whites stiffen.
    If you use a copper bowl to whip egg whites, they will fluff up even more than in a glass bowl.
    Never use plastic bowls to whip up egg whites.
    I do not know if Egg White powder stiffens up/fluffs up like real egg whites?

    Another TYPO: Carbs are nearly 1.0 blocks, and not 1.5 blocks,
    BUT will vary depending on your choice of sweeteners.
    Sweeteners take edge of of tartness of yogurt ,
    AND the bitterness of the pure, virgin, cocoa powder.
    NOTE: If you use Cacao powder, instead of Cocoa powder,
    note that cacoa powder has fat in it, while cocoa powder does not.
    Appears to be the difference (generally), aside from the spelling.

    The difference between cacao and cocoa is Cacao is raw, cocoa is roasted.

    Theobroma cacao (Cacao Tree) is the tree from which the Cacao bean comes. Cacao beans are found inside the "fruit" of the tree, pods about the size of a football.

    Cocoa is what the beans are called once they have been cleaned, roasted and processed.
    Cacao is the same bean but still in the raw state, uncooked and unprocessed.

    The ORAC value comparison per 100 grams

    1) Raw cacao powder 95,500

    2) Raw cacao nibs 62,100

    3) Roasted cocoa powder 26,000

    Raw cacao is comprised of over 300 compounds including: Carbohydrates, protein, fat, fiber, iron, copper, zinc, magnesium, calcium and sulfur.

    Cacao once cooked and processed ("Cocoa") Loses much of its nutritional goodness which are destroyed by the heat. Once milk is added the antioxidant levels drop also dramatically. This is what you find in the popular chocolate bars and candies.

    Raw foodists will only use and advocate raw cacao for its high nutritional value which gives it the "superfood" status.

    In the United States, cacao is often referred to simply as cocoa, which leads to the confusion as to the difference between the two.

    Thx for the additional info.
    I had also researched the two terms a while back, and its not consistent.
    Generally, what you say should be true.
    However, in my research not just wikipedia, some companies interchange the two terms cocoa and cacao, too.
    And others site more fat removed in cocoa and cacao, also as you state that also means more nutritional ORAC compounds, as well.

    It's good to know that the ORAC level is so high in the raw cocao powder. I use about 1 TBS when I make my hot cocoa with unsweetened almond milk and stevia. 1 TBS is probably only about 5 grams but that would still be 4750 ORAC units. If I have 2 cups of it a day I'm getting about the same ORAC units in a Polyphenols Plus capsule.

    you spelled cacao or cocoa with one "o" and one "a".
    I think you meant cacao?
