I wonder if anyone knows how to account for Frozen Yogurt (we'll assume non-fat) in blocks.

Check out the nutritional info in the specific brand. Look at the protein and carbohydrate (and fat if any). One P block contains 7 grams protein. One C block contains 9 grams of carbohydrate (if you want to be really exacting, that's total carbohydrate minus total fiber).
