I now have my Cauliflower "mashed potato" recipe spices down to where both my wife and I like it, and I do not taste any residual (cauliflower, sulfodine like) taste ... per head of cauliflower, steamed with 1/4 cup 2% milk, and 2 Tbl EVOO or pastured, grassfed no-salt butter (or 1 Tbl ea), In blender: 1 tsp himalayan crystal salt 1/4 tsp pepper (I liked more, she less) 1/2 tsp ground cloves A few fresh (home grown) mint leaves The mint and cloves balance nicely.

I like to add salt, hummus and plain, nonfat yogurt to mashed cauliflower. |

I make them to taste like a combination of the smashed garlic potatoes you used to see a lot in restaurants a few years ago and a "loaded" baked potato. I add milk, S&P, garlic, scallions, a slice or two of low fat turkey bacon and shredded reduced fat cheddar. We eat a huge plateful as a meal and add berries for dessert to complete the balance. Gee, now I want some, lol (it''s reeeeally good)! Guess what we'll be having for dinner tomorrow! |
