Lemon Blueberry crepes-gluten free

    I do this as a two block breakfast but its easy to double for 4 blocks
    I have seen many cottage cheese pancake recipes and I have fine tuned this one to keep the carbs down. The "toppers" make it a delightful little breakfast that feels like your splurging. The lemon honey is very tangy and bright so you only need a little bit.

    2 Block Recipe

    3 tablespoons liquid egg whites
    1/3 cup 2% cottage cheese
    1.5 tablespoons of Pamelas Gluen free baking mix
    1/2 tablespoon butter* for cooking and topping
    1/4 cup fresh blueberries
    1 teaspoon Lemon Honey Creme (found near honey at stores)

    Combine cottage cheese, baking mix, and egg whites in a bowl. Stir and mash up the curds a bit but leave some. (I tried using a blender and made it smooth but they come out more gooey and less fluffy) Heat half of the butter in medium heat NON-stick pan. Spoon batter into 3 pancakes. when slightly browned turn over---these are very delicate so you really need to "get under" them to flip em.
    when both sides are browned. move to plate. Top with rest of butter. Individually drizzle lemon creme over and sprinkle with blueberries. YUM

    *olive oil would make these too soggy to flip that's why I choose butter. Besides this is a breakfast treat.;)

    Carbs 19.4 (without fiber, 9.4g sugars)

    and I counted the carbs in the cottage cheese in the calculations-those of you who don't could have more berries:)
