Roasted chicken with "traffic lights" veggetable mix

    It is very good - I cooked it last night for us. Here is a receipe for 2 people (3 blocks + 4 blocks)

    2 chicken breasts - one bigger, one smaller
    2 table spoons of chopped Spanish chorizo, pan dry fried (discard the fat)

    Following vegetables roughly chopped to 1/2 inch chunks
    1/2 green pepper
    1/2 red pepper
    1/2 yellow pepper
    1 zucchini
    4 tiny green and yellow patty pans (they are type of squash)
    4-6 chestnut mushrooms
    1 red onion (bigger chunks)
    1-2 garlic cloves

    1 1/2 tsp of olive oil

    Add all the raw veggies into a large glass baking dish. Mix them a bit with your hand. Make a few shallow cuts into the thicker part of chicken breasts to allow them to cook evenly. Make two openings in the veggie mix and place chicken breasts there. Sprinkle fried chorizo over chicken and vegetables. Sprinkle the whole lot with sea salt crystals, dried thyme etc and with olive oil.

    Roast it about 30 min in fairly hot oven 375 F (gas mark 5).

    Serve with mix leaves salad e.g. rocket, spinach and watercress. I estimated that we both had around 1 1/2 carb blocks each so we had a mix fruit salad for dessert (2 plums, 1/2 pear, 1 kiwi, handful of mixed grapes - between us)
