Chicken with sundried tomatoes and olives

    Dinner for 2 (3 + 4 blocks)

    2 chicken breasts (1 smaller, 1 bigger)
    few pieces of sundried tomatoes in olive oil - chopped
    5 black olives - chopped

    Make incisions in chicken breasts, sprinkle with salt and pepper. Mix chopped tomatoes + olives and spread the mixture over the top of chicken breasts. Loosely wrap in foil - do not close the opening and bake for 30min.

    In a meantime fry on a bit of olive oil (less than 1 tsb):
    1 chopped courgette (zuccini)
    1 red onion (cut into wedges)
    5 muchrooms (cut into chunks)
    I usually fry until dry and then sprinkle with salt to add some moisture.
    My husband doesnt like the coriander (cillantro) so I add the roughly chopped coriander leaves to the half of this mixture.

    Serve the chicken with tomato and juices over it, surrunded with veggies. I also add a green salad (mixed leaves) to it.

    We had some plums and peaches for dessert (1 1/2 block each)
