This is what I will be cooking tonight for our dinner (3 + 4 blocks) 1 courgette (zuccini) 1 red onion 1 red or yellow or orange pepper 3-4 mushrooms 2 whole garlic cloves unpeeled Roughly chop all the veggies into big pieces and transfer them to the glass oven dish or tin lined with foil (which was previously sprayed with olive oil spray). Place a twig of thyme or rosemary on top or sprinkle with dried herbs for flavour. Put into the hot oven for around 30min until nicely browned and crunchy. 8oz of raw turkey breast fillet - 2 thin pieces, or one large thin piece 1 egg white whisked 1 tsp of bread crumbs (regular or made from steel cut oats) Make sure you buy thin slices of turkey or use meat tenderiser. Sprinkle with salt and pepper. Heat some light olive oil on the frying pan. Dip each turkey piece in egg. Then holding it with a fork sprinkle both sides with a bit of bread crumbs and immediately place on a frying pan. Fry on both sides quickly until browned. Arrange your turkey and veggies on a plate. I fill the remaining space with green mixed leaves (rocket, spinach, watercress etc) I usually have around 1-1 1/2 carb blocks for dessert as mixed berries, kiwi and grapes. Or 1 peach etc. |
