Pizza with Almond Flour

    I have not tried this, yet. I need to try and then tinker to reduce fat to meet Zone.
    (A little extra would be OK.)
    .
    Salt, 0.25 tsp
    Baking Soda, 0.25 tsp
    Egg white, 2 serving
    Extra Virgin Olive Oil, 1 tbsp
    almond meal (almond flour) - 1/4 cup, 6 serving
    .
    Toppings:
    Mozzarella Cheese, whole milk, 4 oz
    Pizza Sauce .5 cup
    .
    Mix all ingredients.
    Press onto greased pan or between parchment paper.
    Bake in pre-heated 350 deg F oven for 15-20 minutes.
    Top and back in oven for about 10 minutes.
    (Until cheese is bubbly, if used as a topping.
    Nutrition calculated with 1/2 cup pizza sauce &
    4 oz whole milk mozzarella cheese.

    Serving Size: 8 slices

    per ea of 8 slices:
    Fat: 16.7
    - saturated 2.9
    - poly unsat 4.0
    - mono 2.2
    Carbs: 5.6 - 2.5 = 3.1
    Protein (total): 4.4 (9.9)
    - eggs: 1.25
    - cheese: 3.14
    .

    Well, at least almond flour is a mono fat! LOL!

    John, you try so hard with pizza recipe. You can just take flat bread with very low carb, oil it both sides, put lots of good protein plus few slices tomatoes and few slices onion and bake it.
    Believe me its delicious and will keep you for 5-6 hours and memory of it will make you very happy.

    I have done pizza using low carb flatbread, but I would like to get away from using the grains.

    I usually just use eggplant slices or big mushrooms as a base spread with tomatoe sauce. I sometimes bake 1/2 of flat bread (= 1C in grams) with 1P worth of low-fat mozarella or haloumi as a side to my salad at lunch. In fact I dont event bake it. I dry fry one side then turn, spread with tiny bit of pesto, slices of mozarella + rocket leaves or basil and let it heat up a moment. Or dry fry the flatbread on one side and next to it fry haloumi cheese. Then turn them over, put cheese on top and then rocket leaves. The rest of my lunch is favourable carbs: a bit of soup or a big bowl of tomato/pepper/cucumber salad.

    John, here's a thought. Skip the mozzarella and instead give it a light sprinkling of parmesan. That takes the fat to a more acceptable level. Eat 1/8 fo the pizza and then for the bulk of the protein and carbohydrate in your meal you could have a sundae for dessert made with Greek yogurt and berries. If you go so heavy with the parmesan as to add back significant fat, then use fat free Greek yogurt in the sundae.

    You could also use a fat free mozzarella cheese, to cut back on the fat.

    Or, just leave it the way it is and enjoy it as an "occasional" meal. Personally, I think that the addition of the greek yogurt and berries would probably take me OOZ. But, it might work for others.

    I am trying to find a grainless (flourless) recipe.
    Otherwise I would just use whole-wheat or other low-carb breads.
