This meal is always a treat. You can make these pancakes any size you want, but I prefer one large pancake per person. It reminds me of Belgian waffles that are served smothered in whipped cream and strawberries. This recipe was one of my tries at developing a Zone balanced version of one of those big German apple pancakes. Five years ago I served these to a crowd of about 10-12 for a special occasion breakfast, making one recipe per person. We had a little assembly line going in the kitchen and everyone loved them! No one even knew they were eating a Zone balanced breakfast. Pancake Topped with Strawberries (one Zone balanced 3 block meal) Pancake: whisk 4 egg whites, 1 T vanilla (or any flavor) egg white protein powder, and 1 T oat flour until mixed well, but not too frothy. Put 1 tsp light olive oil (one with no olive taste) in a nonstick 10 “ pan, pour in the batter and cook over medium heat as you would an omelet, but leaving it flat in the pan not folding it in half. When it’s set and the bottom is beginning to slightly brown, flip and continue cooking long enough to lightly cook the other side. Transfer to a plate. You’ll have a large “pancake” which covers the entire plate. Add the toppings. Topping: 1 ½ to 2 cups strawberries (fresh or frozen, thawed), dabs of whipped cream (from the can). Sprinkle with 1 T slivered almonds. For a blueberry pancake, substitute ¾ to 1 cup blueberries for the strawberries.

I made this for lunch today! I liked it so much I made it to take to work for my lunch tomorrow. I'll have to skip the dollops of whipped cream but that's ok. |

I have several zoned pancake recipes, as well, using cottage cheese in place of the protein powder. YUM! |

I have a very simple one (4 blocks) -- 2/3 cup of egg beaters, 14g of whey protein that has stevia in it. I cook it like a big omelet. Serve smothered in almond butter and fruit. I usually need additional berries to make up the carb blocks. |
