    Here's an old recipe of mine for a Zone friendly pizza, very much like real pizza but without bread, though the crust does contain a bit of flour. I’d consider this a once in a while meal due to the flour and the whole eggs (higher density carb and AA).

    Zucchini Crust Pizza

    Makes one pizza (about 12-14 inch). Serves four.

    Crust Ingredients:

    3 cups shredded zucchini
    salt
    3 whole eggs lightly beaten
    ¼ to 1/3 cup flour
    1/4 cup grated parmesan cheese
    1 to 2 T chopped fresh basil (or a lesser amount of dried basil)
    dried oregano to taste

    Toppings:

    1 cup spaghetti sauce or pizza sauce
    ground black pepper to taste
    1 or 2 chicken or turkey Italian sausages, crumbled and browned
    1 green pepper, sliced paper thin
    1 onion, sliced paper thin
    2 cups shredded low fat mozzarella

    Directions:

    Pre-heat oven to 350.

    Lightly sprinkle salt on shredded zucchini, mix in, and leave for 15 min. Squeeze out water. Mix all crust ingredients and spread on pizza stone or 12 inch prepared pizza pan. Bake about 20 min or until top is dry to the touch and beginning to brown . Remove from oven and add toppings in the order listed. Return to oven and bake until cheese is melted. Serve with fruit for dessert.
