    I was doing some homework on almond flour, reflecting on recent discussions. I found a website that has lots of gluten-free recipes in which almond flour is used a lot, Elanas Pantry. The author of the website states that almond flour should not be confused with almond meal. She recommends buying it in bulk and lists several websites (purchasing on the web is apparently more economical than purchasing in the store).

    Just thought I would share this, as I was not sure what almond flour really was until I read up on it. I had not had a chance yet to try John's pizza dough recipe, and now I am glad that I read this because I would have used the wrong thing!

    Here's a tip to keep in mind for all who are using almond flour. The finished product will only be Zone favorable if the flour is kept to small amounts.

    Almond flour may be high in fat, but it is one of the best fats in the Zone. In addition, almond flour will not alter blood sugar and insulin levels like wheat flours, and this seems to be a really good alternative IMO for those who are intolerant to gluten, or choose to live "wheat-free". Obviously, the amount of flour used in a recipe will have to be considered, but for those who would like to experience the enjoyment of preparing a pizza crust (as per our recent posts this week), I don't truly see the harm in it. Everything in moderation!

    Hi CC

    I made my pizza with the almond meal. I am going to do some investigating and see if I can get the almond flour in Australia. I have found a health food shop that has the coconut flour but the owner hadnt heard of the almond flour.

    Margaret, as I was reading up on almond flour, I found a video recipe of someone making a pizza dough recipe from almond flour. It was not the recipe that John posted, but she did recommend baking the crust for about 10 minutes prior to adding the ingredients. I wonder if that would help your recipe, as you mentioned the longer baking time?

    Almond meal, almond flour or ground almond is made from ground sweet almonds. Almond flour is usually made with blanched almonds (no skin), whereas almond meal can be made both with whole or blanched almonds. The consistency is more like corn meal than wheat flour. It is used in pastry and confectionery – in the manufacture of almond macarons and other sweet pastries, in cake and pie filling, and is one of the two main ingredients of marzipan and almond paste.
