    Tomato-Basil Salad

    Makes a 1-block snack

    2 medium tomatoes, chopped
    1 tsp olive oil
    balsamic vinegar, to taste
    basil, to taste
    1 stick string cheese

    Chop tomatoes, place in serving dish. Mix olive oil and balsamic vinegar; drizzle over the tomatoes. Sprinkle basil over the top. Serve with string cheese.

    **especially tasty with home grown tomatoes and fresh basil** (dreaming of this after reading Margaret's post about her garden on another thread)

    Replace string cheese with low-fat mozarella or feta cheese?

    I am dreaming of my veggie garden as well!! I am hoping to start planting this week. I have a variation on the recipe as well.

    chopped tomatoes
    chopped red onion (small amount)
    olive oil
    balsamic vinegar
    feta

    Margaret, I think it was YOUR garden that I referred to when I first posted the recipe! LOL!

    Bozena, it doesn't matter, you can use whatever cheese is desired. You can even use something else other than cheese! I posted this recipe a few years ago, so this is a re-post. It might even work out nice to add some chopped deli meat right to the salad.
