    We love this taco burger salad. It's like the one in TOXIC FAT, but I add my own twist.


    **********************************************************************************

    TACO BURGER SALAD


    1. Saute minced garlic and a fair amount of chopped onion in olive oil. Add a medium or hot salsa, black beans, a little water and the Tex/Mex seasonings of your choice. Simmer.

    2. While the mixture simmers, in another pan saute a burger made of 4 oz ground turkey mixed with 1/4 cup salsa.

    3. Plate the meal as follows: Place the burger on a huge bed of shredded iceberg lettuce. Sprinkle with a 3 crushed whole grain corn chips. Top with the bean mixture, a little bit of shredded low fat Mexican blend cheese, a dollop or two of plan yogurt or low fat sour cream, diced tomato, chopped scallions, sliced jalapeno, and a little bit of sliced olives.

    I hadn't eaten lunch yet and had most of the ingredients on hand so, I decided to try this for lunch today. I had ground chicken rather than turkey and instead of making a burger, I just mixed 4 oz of ground chicken on the pan with 1/4 salsa and cooked the meat in the salsa like taco meat. I didn't have the chips so I skipped those and then; I assembled it as listed in the recipe.

    This was very good and I want to thank you for posting such a delicious and easy recipe. I'l be making some for my hubby when he gets home from work. He eats whatever I cook for him (as long as he likes it) so he's being taken (rather willingly) onto this Zone Diet journey with me. Hopefully it will help his bp and cholesterol.

    Excellent, Sharon. Glad you like it. It's from a recipe in the most recent Zone bool, TOXIC FAT, by Barry Sears. Your husband sounds like my husband. He'll eat just about anything too, as long as he likes it. :-)

    I make it with Litelife Mexican-Style Smart Ground (soy crumbles). It's fantastic.

    That is a great idea, Larry. I wish I could eat more soy as I desperately want to be a vegetarian but I have hypothyroidism and I"m not supposed to eat it often. I'm here to check out this recipe again as I enjoyed it so much, I'm making it again for lunch.
