    I couldn't find anything about star fruit on the lists. Anyone know if it should be eaten in moderation or put in the same catergory as bananas, etc. Thanks in advance for your responce's

    Gary, I would recommend eating in moderation. Many tropical fruits are considered unfavorable carb. However, it is a good source of fiber! Looks like one large starfruit has about 8g carb and 3g fiber.

    Hi Gary,

    Star fruit would probably be cosidered a Zone favorable carbohydrate judging from the info I just found on Nutritiondata.com.  It shows 1 cup of cubed star fruit (aka carambola) to have the same glycemic load as, and only slightly less insulin stimulating carbohydrate than, than 1 cup of raw strawberry halves.

    One cup of strawberries nets out at 9g carb, and has a GL of 3. One cup of starfruit only nets out at 5g carb, and so one would need to equalize the carb grams in order to make a true comparison. Once you do that, the GL is twice as much as a block of strawberries.

    OK, starfruit would be considered on par with the strawberries. Of course it's the balance of the "whole" of what is being consumed. The GL is 3 but you still need to incorporate the protein which changes the whole equation.

    No problem. It is a good source of fiber, though. And a good source of vitamin C.
