I'm confused - I see on the food list that 1 teaspoon light mayonnaise is 1 block of fat, but the light mayonnaise that I have is 3.5 grams fat, 1 gram carbs, and 0 protein so 1 tablespoon. So, don't I count that as 1 tablespoon = 1 block of fat?

Pam, defer to the info on the product's nurtitional label.  Also, each Zone fat block you add to a meal/snack contains 1.5 grams of fat (the other 1.5 g fat that makes up the 3g fat needed for Zone balance usually come from the fat "hidden" in the protein block) , so use about 1/2 tablespoon of your brand of mayo for 1 F block.

Thanks! That hidden fat in the protein keeps confusing me.
