I think it looks good. The nice thing about fahitas is that you don't really HAVE to eat them with a tortilla.
The balance will depend on the amount of carb in the tortilla, and there may be some differences from one brand to the next.
I wouldn't worry about the honey, it contributes about 2 grams of carb.
Looks like about 2 blocks of veggies.
Overall, I think it is decent recipe, with maybe just 1/3 of the carbs coming from unfavorable. Just slightly over zone recommendations (i.e. no more than 25%), but really not a bad way to enjoy if this is one of your favorite things.
And, you could easily eat this without the tortilla, increasing the veggies a bit and then maybe crunching up a few corn chips and sprinkling on top.
