    Ingredients: 

    -  1 box Barilla Plus Rotini (note: only 1 c. cooked is needed for the 3 block meal)

    -  salt to taste

    -  water

    -  2 oz. pre-cooked, shredded chicken

    -  spoonful of your favorite spaghetti sauce (just enough to lightly coat)

    -  9 black olives, sliced

    Directions:

    Per the box:  Cook Barilla PLUS® in boiling water 10 minutes, then drain and serve according to the recipe directions.  For more tender pasta, boil an additional minute  (Due to its higher protein content Barilla PLUS® takes several extra minutes to cook than traditional pasta).

    Place 1 cup of the cooked pasta in a bowl.  Add the chicken, spaghetti sauce, and sliced black olives.  Lightly toss and serve.


    Makes one 3P 3C 3F meal.

    Of course the pasta is unfavorable Carb.
    You also might want to try Dreamfield's pasta - available locally at some supermarkets.
    You get a lot of pasta for only 1 block unfav carbs, allowing you to add additional favorable carbs .
    4 oz uncooked = 8 oz cooked = 10grams net carbs = 1 block carbs.

    Thanks John!  I looked for some of the lower carb/higher protein pastas, but the best I could find was Barilla.  I will keep checking around though.

    Dreamfields is popping up in many grocery stores, so keep checking!  They also make lasagna noodles, and I enjoy making lasagna for my family on occasion, and I don't have to worry so much about glycemic load.

    My wife did a simple "roll-up" lasagna last night. 
    Used Dreamfield's lasagna noodles, cooked noodles until pliable,
    Fried up some vegetables (zuchinni, mushrooms, onions, peppers),
    Rolled veggies up with some thawed frozen spinach and some lo-fat cottage cheese in the lasagna noodles,
    Put some pasta sauce under and over the rolled-up lasagna noodles,
    Baked about 20 minutes in oven to heat thoroughly.
    (Added some additional lo-fat protein on the side.)

    That sounds good, and easy, too!

    I can picture that being a neat kitchen activity with the kids, each one can make their "roll-ups" just the way they want!
