Does anyone know the serving sizes of some of the more unusual seasonal foods and typical fall foods (not ones you are going to eat every day, but might partake a little of--I know they are not all favorable!)
Examples:
Persimmons
Pomegranate seeds
Pumpkin
Butternut Squash
Especially when the weather turns cool I am craving butternut squash, but I know that I can't have much.

Hi Ronica!
Ya know, I was just looking up pumpkin the other day.....it's just that time of year!
Carb blocks:
persimmons: 100g=33.5g CHO, no fiber listed....1 fruit, edible portion only, is approx 25g, so 8.4g CHO, or 1 C block.
pomegranate:no listing for seeds separately. 100g=17.2gCHO and .6g fiber;16.6 net g CHO. 1 fuit approx 154g, so 25.6g CHO, or approx 3 C blocks.
Since they have little fiber and are mostly sugar carbs, I would suspect they are unfavorable.
pumpkin (cooked, boiled):100g=4.9gCHO minus 1.1g fiber; net carbs 3.8g. 1 cup=245g, so 9.3gCHO, or 1 C block.
squash, butternut (cooked, boiled): 100g=10.5gCHO minus 2 g fiber; net carbs 8.5g. 1cup cubes=205g, so 17.4g CHO, or 2 C blocks.
Again, not high in fiber, but since the nutrient levels are high, I personally wouldn't consider these unfavorable.
I haven't had a chance yet to try and find the glycemic index values for these babies, but that would give you a better idea of their "favorability".
Now if I can just tweak a pumpkin pie recipe that doesn't require tofu! :roll: |

Butternut squash (along with acorn squash) appears on the unfavorable carb listing in "AWITZ".

I thought I remembered that, Sue. Darn--it is really delicious. Well, I guess I can occasionally have a little.
I am surprised by pumpkin's specs--I would have thought it would be similar to the squash--maybe because it's not as naturally sweet?

Spaghetti squash is a favourable carb and 1 cup = 1 block of carb. |

Good point. How about without artifical sweeteners too.
(I'm tofu-phobetic and artifical sweetners give me migrianes) |
