    I'm really confused about veggies and how many blocks they make up. For example, the list on this site shows that 4 CUPS of broccoli is just ONE carb block. That just can't be right, can it? If I'm supposed to have 3 carb blocks, how the heck am I going to be able to eat that much?!?!

    Hi Jen,

    Yes, 4 cups of broccoli is only 1 carb block. And 20 cups of spinach is only 1 carb block as well! So what you do is mix up the types of carbs you have in a meal. For example, you could add beans to a salad -- just 1/4 cup is 1 block. 2 tomatoes is also 1 block. If you have fruit for dessert, that would be carbs as well -- 1/2 apple is 1 block, or 1 cup of strawberries.

    Agreed, it is a daunting task to eat that much, and quite boring, too!  I mix things up, too.  Depending on combinations that you enjoy, I combine blocks so that one block  is a larger volume carb, and the other blocks are smaller volume carbs.  I used to use the block list frequently to work this out, but seems to come easily now.
