    Hi!  I have a question about low carb tortillas and bread.  Do I really subtract the fiber from the total carbs?  Also, do I account for the protein in those sources, or not?  Finally, I found a lunch meat without nitrites and preservatives.  Package says 3 slices = 11 g. protein, but do I add the small amount of fat (about 1 g) and carb (about 1-2 g) toward my meal count?  Thanks.

    Yes, you would subtract the fiber from the total carb of the tortillas and bread.  However, make sure that you still treat the remaining carb as "unfavorable".  I would not worry about the small amount of carb content in the meat.  In 11 g of protein, if there is only 1g of fat, I would probably just treat the meat as a fat free protein, as there is not enough fat.

    YES, you subtract the fiber from the Total Carbs to arrive at Net Carbs.
    However, this is for USA packaging - on other countries packaging Total Carbs are actually the Net Carbs - in some countries.

    NO, you do not count the Protein, unless the protein is from Soy.  All other protein other than Soy in grains / grain foods is bound-up and unusable by our bodies during digestion.

    Yes you would consider the Fat of 1g per 3 slices.  Total Fat per block (Zone serving) should be about 3g Fat per 7g of Protein. 
    .
    The Carbs in the lunch meat appear negligible, and you do not need to worry about them for this particular food.
    .
    Note that the totillas, though low in total net carbs are still unfavorable carbs.
