hi
i need some pancakes recipes i tried to do somes but they are like a big cookie (thin, dry and hard) and they are always stuck on the skillet |

I have done well with a batter using cottage cheese, of all things. Basically blending cottage cheese with eggs, and using oat flour. I will have to do some digging, as the recipe is no longer in a file on the computer that I am on.

COTTAGE CHEESE PANCAKES
8 egg whites 1 1/3 cup old fashioned oatmeal, dry 1 cup low-fat cottage cheese 1 tsp vanilla 1 tbsp + 1 tsp (or 4 tsp) cooking oil
Blend all ingredients together until batter consistency is reached. Sometimes, I may blend the oatmeal by itself first to make it more of a flour, then add the other ingredients. Then, after the batter is ready, use a good cooking oil to fry them in. If you are using nonstick pans, then blend the oil into the batter.
This recipe makes 4 servings, and each serving is about 3P-2C-3F. I left a little room in the carbs for any additions. I like to top these off with some strawberries! |

I love these pancakes, 2 servings:
In blender process 1/2C steel cut oats to flour (or use oat flour) add: 12 egg whites 18 almonds 1 apple blend well, a few min. let sit 5 min and blend again. I add blueberries, yummy
They freeze well, thaw fast and make great quick snacks. You can eat them just thawed or heated in the toaster over. |

Here's one of my family's favorite Zone pancakes. You can make them any size you want, but we prefer one large pancake per person. It reminds me of Belgian waffles that are served smothered in whipped cream and strawberries. This was one of my tries at developing a Zone balanced version of one of those big German apple pancakes. It's similar to the recipe Tech Support posted here. Four years ago I served these to a crowd of about 10-12 for a special occasion breakfast, one recipe per person. We had a little assembly line going in the kitchen and everyone loved them! No one even knew they were eating a Zone breakfast.
Pancake Topped with Strawberries (one Zone balanced 3 block meal)
Pancake: whisk 4 egg whites, 1 T vanilla (or any flavor) egg white protein powder, and 1 T oat flour until mixed well, but not too frothy. Put 1 tsp light olive oil (one with no olive taste) in a nonstick 10 “ pan, pour in the batter and cook over medium heat as you would an omelet, but leaving it flat in the pan not folding it in half. When it’s set and the bottom is beginning to slightly brown, flip and continue cooking long enough to lightly cook the other side. Transfer to a plate. You’ll have a large “pancake” which covers the entire plate. Add the toppings.
Topping: 1 ½ to 2 cups strawberries (fresh or frozen, thawed), dabs of whipped cream (from the can). Sprinkle with 1 T slivered almonds.
For a blueberry pancake, substitute ¾ to 1 cup blueberries for the strawberries.

hi thank you very much for your recipes. But i have somes questions: We don't have oat flour so we have to process the oat (quick quaker oats) in a blender so, how much "oat flour" is for one block? don't we have to use baking powder?? i've already bought cocoa powder, -in 6gr it has 3.4gr of C (2gr fiber and 0.2 sugar), 0.6 gr of F, and 1.5gr of P. How much is for one block? |

I don't put baking powder in mine, either. It probably won't hurt any if you want to add some.
My recipe starts out with dry oats, and is approximately 8 blocks of carb. You would use the same proportion for quick oats, as I think the carb values are very similar. |

Totals: 2.5 P 3.3 C (Strawberries) 3.2 C (Blueberries) 3.3 F This needs more P I'll try: + 0.125 (1/8) cup 2% cottage cheese = .6 P + 1 (additional) Tbl of protein powder = .25 => making it about 3.3 P total. |

Hi John and everyone,
The eggwhite powders I used all contained a block of protein per T. If yours doesn't, simply change amounts to yield enough protein, though it may change the nice light texure of this pancake.

Sue's Steel Cut Oat Pancakes
(4P, 4C, and 4F)
Ingredients:
For the pancake batter:
the whites of 2 eggs
1/4 cup cottage cheese
2 scoops of Zone Protein Powder
1 1/3 cups of cooked steel cut oats
1 teaspoon of alcohol free glycerin based vanilla or almond flavoring
1 teaspoon almond oil (light olive oil can be used instead)
water to slightly thin the batter (don't thin it too much!)
For cooking:
1 1/3 teaspoon light olive oil
Directions:
Process the pancake batter ingredients in a food processor only until the cottage cheese lumps disappear (there will still be some visible oatmeal grains). Thin with a little water if necessary.
Heat the oil on medium in a well seasoned cast iron skillet or a blue steel crepe pan (the steel crepe pan works best). Turn heat to low and pour batter into the heated pan making 3 to 4 inch sized pancakes. The recipe makes about 8 to 10 pancakes (they're thinner than traditional pancakes made with flour).
We split these between 2 people and add other foods, such as cheese or turkey bacon, and berries, to complete the rest of the meal.

John, regarding my recipe, I don't think that the dry steel cut oats measures the same as the rolled oat flakes. I think that is where the error is. I think that 1/4 cup uncooked steel cut oats is the same as 1/2 cup uncooked rolled oats. So, if you didn't make that adjustment, then I can see how you would have come up with twice as much carb. |
