Things don't seem too good for you and so I would say you have to make some difficult decisions. One of the reasons I decided to write to you is my husband has some of the traits as your husband but in a very different way. Since I have tried so many diets and none of them have worked my husband doesn't have much faith in another one even if it is the zone diet. However, over time he will come around.
I think you have to do what you think is best for you and your children first. Since your husband wants to eat junk food if you want to stay married I would suggest you stock up on it. One possibility would be to make some cheap junk food items for him and stock them in the refrigerator for him to take at his convenience. Since he likes ramien noodles maybe you could make some pasta salad, potatoe salad, cakes and chips around for him. I feel he will never let you get your needs met until his needs are met first. Then you have to do your foods cheaply which I feel is possible if you really review the recipes in the zone books. Money is an issue for me but not to the extent it is for you.
I really think the fact you seem determined to stay healthy and are health conscious is your best asset. I have a very hard time staying so determined. I use to be very health conscious but don't know what happened to make it much less of a priority for me. I have to assume your husband does care about you quite a bit and again if he feels you care to meet his eating needs a bit more he might be willing to let you do the same.
