Confused by nutritional information labels

    I easily can see why one peanut butter's nutritional information would differ from another, but scallops?

    The package says 3 ounces is 20 grams of protein, but other sources say 4.5 ounces are 21 grams.  So, what should I go by?

    I would use the specific label of the brand / package you are using at the time.
    By rule of thumb, with no package, fish is generally 1.5 oz to 7g (1 block) of Protein.

    Doesn't it seem odd that scallops would vary in how much protein they have per ounce?

    I suppose I question it because it's not in my favor; whereas, with the Surata brand firm tofu I buy, I'm perfectly willing to trust that 3 ounces have less than 1 gram of carbs because that's in my favor.  Still, that could be because of the way the tofu is made,  With scallops, I don't see how they can be "made" differently...   Hmmm, unless they're fed something different.

    Hi Pomegranate,

    The weight of afood can change depending on how it's processed (frozen, cooked, etc.).  For example cooking reduces the water content of food, making the food weigh less as the water in it evaporates when the food is heated, the result being the food contains more protein per ounce of weight in its cooked state than raw.  Another example, some foods are plumped by adding water, broth, etc., making them less protein dense per ounce of weight.  

    The variety of scallops might also account for a difference between two products.

    Defer to the nutrition info on the package.
