I saw this recipe on "America's Test Kitchen" and thought it sounded delicious:
Pesto Alla Trapanese
1 ounce Parmesan cheese
1/3 c extra virgin olive oil
1 garlic clove
1/4 cup slivered almonds
12 ounces cherry tomatoes
1/2 cup packed basil leaves
1 small pepperoncini
Blend all the ingredients in a food processor.

Ohhh! Sounds good. It would be fine as long as you're only use about 1T or so at a time. You can consider it to be a condiment like the other fats you'd use in on the 1-2-3 plan.
