I'm wondering if the block size for Cauliflower is correct. I'm looking at the USDA's listing for it and it lists 1 cup has 5.32g carbs and 2.1g Fiber for an effective 3.22 carbs. 4 cups of that would put you at 12.88g (lets just say 13g), a little over the 9g that we're looking for. Shouldn't the block size be 3 cups (making it 9.22g) if we're aiming for 9g carbs or am i being too exact?
I've never made Mashed Cauliflower before but I would like to. I'm wondering if just mashing it wthout adding anything after steaming it would still give me the consistency close to mashed potatoes or will I need to add something? I've read some people add yogurt. I'd prefer to stay away from adding anything into it other than another carb block, I'd like my protien to come from another source.

Darrel, I puree/mash cooked cauliflower in a food processor with some milk garlic powder salt and pepper. Then I stir in some grated low fat cheddar and top it with diced cooked turkey bacon and chives or scallions. We love it!

Sounds like a good recipe, but I don't want all that other stuff. What's the consistency of just pureed Cauliflour?

It's looser than mashed potato. Best would be to try it and see how you like it. The seasonings, cheese and toppings are not necessary. I add them for flavor because plain pureed cauliflower is a bit too bland for our tastes. Let us know what you come up with. Good luck!
