I love garlic! I like to put fresh garlic and freeze dried garlic on my steamed veggies and in my ground turkey. Is this acceptable or do I have to count these as carbs?

No, no need to count Garlic as a Carb!
(It would take so much Garlic to even count as a Carb to be ridiculous,
about 1 pound!!!)

Cool. Yeah I love garlic but not a whole pound of it! If there any spice that you count? Also, I love ketchup, how should I count that? I know it's on the unfavorable list, but every once in a while I feel like I need it. How do you count that?

Yes, you should count ketchup as carbohydrate.
