I'd start with TOXIC FAT to get the whole picture. THE SOY ZONE might also be a good book for you to read.
As for what to eat, it sounds like the biggest adjustment to your current diet will be adding some protein to your meals and snacks. The best sources for you will probably be fish, poultry, tofu and egg whites. Try to make sure most of the fat you add to meals is monounsaturated fat (see the best fats listed in the Zone Food Blocks list.
