    Hi there

    I have been asked to make some suggestions for pre packed 2/3 block meals for a course I will be attending next weekend. All I can think of is chicken salad, but the thought of limp lettuce and soggy tomatoes is really unappetising to say the least!!! We have no facilities on the course to heat anything up, but will be able to pre cook stuff.It is really hot here during the day so something light and refreshing would be ideal. Any suggestions would be appreciated.

    An easy idea would be to pack some of those tuna pouches, each one is approximately 3 blocks of protein. Then, you can bring along some fruit, maybe an apple, for your carb, and some nuts for the fat.

    If you are interested in a salad, you could do one similar to one that I like:

    TUNA GARBANZO SALAD

    1 can tuna, 6 oz
    2 cups celery, chopped
    1 cup onion, chopped
    3/4 cup garbanzo beans
    2 oz shredded fat free cheese
    1 1/2 cup tomato, chopped
    2 tsp olive oil
    3 tbsp balsamic vinegar
    salt/pepper/parsley to taste

    (if you are not excited about putting tomato in this, then you could sub in a red pepper, same color, but perhaps a different taste)

    In a large bowl, drain tuna and flake. Add the veggies, mix together. Mix the olive oil and vinegar, pour over the salad, season and blend it all together.
