Roasted Garlic Zucchini and Tomatoes

    I found this on AllRecipes.com, and it's delicious and very Zone-favorable for the C and F portion of a meal or snack.

    For more "substance", I served over steamed cauliflower -- it was so good that I'm going to include cauliflower in the recipe next time. Also, didn't include the Parmesean cheese -- I just sprinkle a bit on top when serving. I also tried sprinkling feta cheese (lowfat or fat-free) on top instead -- that was delicious, and provided the P for the snack. One of the reviewers suggested 1/2 T balsamic vinegar, and others agreed that it was a great addition to the flavor -- I'm going to try that next time.

    FYI -- I doubled the recipe, and forgot that it's often not a good idea to double the spices -- so don't double the red pepper unless you like it hot!

    Block conversion (for double recipe, with less olive oil)

    4 zucchini (25 oz raw)
    4 C sliced tomatoes (24 oz raw)
    1 large onion (7 oz raw)
    4 teaspoons olive oil
    exclude parmesean cheese

    makes a total of 52 oz, 6C/6F
    8 1/2 oz serving = 1C/1F
