Why does 5 grams of fat only weigh 2grams?

In A Week In The Zone, the table in back lists 2/3 teaspoon as containing 5 grams of fat but when I weigh 2/3 of a teaspoon on my scale it only comes out to 2 grams.
Similarly, on the olive oil bottle it says 1 tablespoon provides 15 grams of fat but when I weigh a tablespoon it only comes to 8 grams.
How can this be?
