Tonight we had for dinner the hummus deviled egg recipe from on eof the zone books and my daughter gobbled it up, she will eat eggs every meal if I let her. Frozen grapes with olives and a string cheese are becoming her fav snack these days. For lunch we all had a salmon citrus salad. I have a three block lunch so I'll give you that recipe and let you alter it as you will. 1 oz feta, 3 oz grilled salmon served over a bed of 2 cups romaine and 1 cup spinach leaves, one heirloom tomato ( medium) and 1/2 raw chopped bell pepper.Add 1/2 orange (squeeze and add pulp to salad) and 1 cup sliced strawberries. For my fat I added 3 tspns slivered almonds. What a wonderful and refrershing pick me up this was for lunch! As always water water water! Anyone have any more lunchbox ideas? I cut cheese slices into heart shapes today and she loved it but I've hit a wall for ideas. |
