Hi everyone. I'm kerry, a bachalor, and I love baked chicken but mine always seems to come out tough. Please someone if you can, tell me how to bake chicken so that it is really tender. Thanks a lot. I hate to sound so desperate. Kerry

Hmmm, are you removing the skin? It's healthful to do so but does make it come out dryer. Here are 2 ideas: Buy a little apparatus where you stand the chicken up on a stand that sits in a bowl. It's hard to explain how this looks, but it is a very neat little gadget. The stand part fits inside the chicken so it is rotisserie style. It works similar to cooking a chicken on top of an opened beer if you have ever seen that on a grill. Bake it whole at 325-350 until done, for a small fryer this is about 1 1/4 to 1 1/2 hrs. The grease mostly runs down into the pan. Then when you eat it, remove the skin. (Although it is very tempting not to.) My 2nd idea is buy a George Foreman grill. It is not baked but this makes some of the best chicken ever. Very juicy. Just throw it on there until done but keep a close eye, it cooks VERY fast! ~Donna

Perhaps you're cooking the chicken too long.

Hi.. I love baked chicken and have a great recipe for a whole baked (roasted) chicken. preheat oven to 500 (yes that is very hot) trust me :D ... under the skin of the breast rub with thyme , salt and pepper cut up one lemon and place inside cavity with some whole cloves of garlic. rub salt on the outside tent with foil and cook for 45min then remove foil and cook for another 15 min... eat with skin off or on save leftovers for salads or other meals for the week... or invite friends.. enjoy. Crystal..
