Specifically, what's the effect on inflammation if eating fewer than your maintenance blocks? I tend to eat twice daily and forget to eat those in-between snacks. Does it trigger inflammation via cortisol secretion?

Eating less than what your body requires definitely could trigger inflammation via cortisol. Putting your body under any kind of stress can trigger cortisol.
