Substitute for chocolate whey protein?

    :?: Hi, I can't wait to make the Zoned chocolate cherry muffins in "Zone Meals in Seconds." I just bought plain whey protein powder and I can't afford to run out and buy *chocolate* whey protein powder now. What do I need to add to the recipe -- if anyone knows -- to use the plain, unflavored, unsweetened protein powder and still have chocolate muffins? I would be grateful for your input. Thanks, Carole

Thanks, Carole[/quote:2c2f19ee7d] Hi, You could experiment with adding cocoa powder. Most cocoa powder has a high fiber count which negates most of the carbs in it. There will be a little additional fat depending upon your particular cocoa powder, but this will be negligible also. No need to adjust fats for it. Cocoa powder is not sweetened, so , depending upon the recipe (I haven't looked at the recipe) you may have to add a little sweetener (I'd use fructose) which would mean making slight adjustments to the carbs, either in the muffin recipe, or in the rest of your meal.     Thank you Sue, I'll check the web site where I got my whey protein powder and see what's in the chocolate whey powder, like sweetener and other ingredients. I'm not very good at ad hoc recipe adjustments! :cry: Carole

There is alreadya fair amount of sweetener (frucdtose) in the recipe. Just try adding 1 to 2 T of cocoa powder. Sue

    Hi Carole. I haven't made the Chocolate Cherry Muffins yet, but I have made the Chocolate Zucchini Muffins several times now. I also cut the recipe just a little to make it 12 mini-muffins instead of 16 (I have a 12 muffin tin and it was just too hard to figure out how much batter to save for those last 4 muffins!) I also use plain or vanilla protein powder. The Zucchini recipe as I've altered it is: Zucchini (~2C worth) [size=9:302c6a23c8]I cut this just a little both for volume and because I added 1/2 C of cocoa[/size:302c6a23c8] 1 cup Oat Flour (5 1/2 C) 9 packets fructose (I can't find the bulk or even boxed or liquid :? ) (3C) 1/2 cup applesauce (1 1/2 C) 1 Tbsp Olive Oil 2 egg whites & 2 whole eggs (3P) 8 scoops whey protein powder (9P) 1/4 cup cocoa powder (1/2 C) I spray the muffin tins with olive oil and bake for 12-15 minutes at 350F. This makes 12 muffins, 100 calories each, 1C, 1F, 1P. (I do cheat sometimes and put 1/4 to 1/2 tsp Agave Nectar on top if I'm craving [u:302c6a23c8]really[/u:302c6a23c8] sweet :) ) I believe that the Chocolate Cherry is pretty much the same recipe with 2C of cherries instead of zucchini (coincidentally, I bought a bag of frozen sweet unsweetened cherries just last night in order to make just that recipe!). I'm also going to try the blueberry muffins again (the first time was a real fiasco!!! and a very long story :lol: ) I absolutely love those muffins - I don't feel deprived of "baked goods" any more! Now we need a good [b:302c6a23c8]Zoned Chocolate Chip Cookie [/b:302c6a23c8]and I'll be EXTREMELY happy!!! Robbin

    I made the muffins and they turned out fine, even though I'm not good at substituting ingredients. Thanks for your suggestion, I kept your chocolate zucchini recipe adaptation in front of me as I went along. BTW, if you want to try Atkins, which I can understand that many Zoners wouldn't want to do, he does make a chocolate chocolate chip mix (either cookies or muffins, I don't remember) and a fudge brownie mix. Probably overloaded with fat though, as many of his mixes tell you to add lots of oil OR heavy cream! :roll: Carole
