Help!! Recipe mistake in 1995 "Enter the Zone" boo

    :cry: Please help if you know the answer. I'm a "returning" Zoner (Zoneite? Zonee?) so I'm taking baby steps again. I tried following the recipe for "Protein-fortified Cornbread Muffins," meant to be a complete Zone snack (1 block each). It is made with 1 small box Jiffy Cornbread mix, 7 T. protein powder, egg or egg subst., 1 C. low-fat milk, and 1 T. olive oil. In the 1995 edition of the book it is on page 260 in Appendix D. First of all there is an obvious error. It says to add two eggs OR one cup of egg substitute. Those two are not equivalent -- that's twice as much substitute as real egg. Second, when I followed it using only 1/2 cup egg substitute, it was still extremely soupy. It uses only one small package of Jiffy mix! This recipe is supposed to make 20 corn muffins. That's way too much liquid for one package of Jiffy. So what to do? Anyone made these? I do love cornbread and since each muffin is one complete Zone snack, it seemed wonderful. I ended up adding a second box of Jiffy, which probably throws the whole balance off, but the consistency was much more like cornbread batter. As of this writing they are still baking, 300 degrees for 35-40 minutes. Thanks to anyone who can help! -- Carole

    Hi, I can't help you with the recipe, but I wanted to suggest the recent Zone book "Zone Meals in Seconds" by Barry Sears and Lynn Sears. It had lots of easy updated delicious recipes and meal suggestions, and is full of new Zone ideas. In addition it is based on the more recent carb block amounts (some have changed since the earlier Zone books came out). Sue

    Thanks Sue, I have the book. Both my husband and I are very very "picky" eaters, plus he has a severe allergy to all shellfish. I found there were very few recipes in the book that either of us would want to eat. So I have been creating virtually all of our meals from my 1996 personalized meal and menu plans from Envion. Neither of us is fond of tofu, egg whites, oatmeal, yogurt, soy protein, turkey or chicken breast, and many of the other recipe staples. That really limits us, I know, but going on the Zone diet AND changing a lifetime of food preferences would be too much for us oldsters. Yep, it's truly a challenge! <Sigh> I guess I will have to give up on the muffins. And they were so tasty after I added another box of Jiffy cornbread mix, heh heh. I would be grateful for any other tips ... Carole
