This recipe was in my local paper today. It would make a great carb adition to a meal. Apple Salsa with Cilantro and Lime 2 cups diced Cameo apples ½ cup diced red onion ½ cup (1 large) finely chopped Anaheim chili pepper 1 jalapeno pepper, finely chopped (optional) ¼ cup lime juice 1 tablespoon chopped fresh cilantro ¼ teaspoon salt ½ teaspoon freshly ground black pepper Combine all ingredients in large bowl and mix well. Cover with plastic wrap and refrigerate ½ hour or until ready to serve. Makes 4 cups Nutrition information per ½ cup serving. 28.2 cal. 7.2g carbs 1.2g dietary fiber 0.2g total fat, 61.3 mg sodium
