    I made my own hummas with garbanzo beans and olive oil and a little basil. The question I have is what is the garbanzo bean to olive oil ratio?

    Hi Steve,

    Since you are making your own, then you can have as much or as little olive oil as you want. I don't happen to have a container with a label handy, but if my memory serves me right, there is probably a block of fat in a carb block of hummus.

    any way you like it.....but my hummus has more fat than would be zoneful....tahini and evoo (extra virgin olive oil)....by the way...is tahini ok? oh, and lemon juice, a lot, and garlic......mmm

    Here is my favorite recipe for hummus. I'm new to the zone diet so I haven't checked to see where this would fall but here it is. Enjoy!

    Hummus

    2 Cups cooked garbanzo beans (chickpeas) (you can cook your own or buy the canned ones. Just make sure you save some liquid either way!)
    1/4 C bean liquid or water
    1/4 C lemon juice
    2 cloves garlic, minced
    1 tsp. salt
    3 Tbls tahini
    2 Tbls. ch. parsley
    2 Tbls olive oil ( optional)

    Puree chickpeas in a processor or blender, adding the liquid for a
    smooth creamy puree.
    Transfer to a shallow serving bowl and beat in lemon juice, garlic, and
    salt; then gradually
    add tahini to form thick, light paste.
    Let stand for about 30 minutes so flavor has a chance to develop.
    Sprinkle with parsley
    and, if desired, drizzle oil over surface just before serving.

    note: you can add other spices or ingredients as desired: cumin,
    roasted red pepper,
    extra garlic, etc....be creative!
